Four Packet Roast (No Salt Added)

Tuesday is slow cooker day at my house, and this is the roast that goes in it more than any other.
A regular packet roast is a sodium trap — those seasoning packets are mostly salt wearing a flavor costume. Mine uses the no-salt versions instead: MySALT ranch and garden Italian packets, a no-salt onion soup mix, and my own homemade beef gravy mix. Same cozy pot roast dinner, and the whole plate comes in at 250mg of sodium a serving.
Everything goes in together — the roast, the red potatoes, the carrots — and it cooks low and slow until the meat gives up. It works in the Instant Pot too, for the days the slow cooker didn't get started in time.
Slow cooker: 6 to 8 hours on low.
Instant Pot: 60 minutes at high pressure, then natural or manual release.
One honest note: this one runs high in potassium — about 2,900mg a serving — because of the no-salt seasoning blends. That suits me fine, since I don't restrict potassium, but if you do, check with your doctor before making it. I'm a cook, not a doctor.
